How Mr.Pimento started?

The Journey..

In the beginning. Early event set up!

It really all began over ten years ago. Cooking and being in the kitchen was like an escape from the worries and cares of the world. The pleasure of creating something memorable that would delight family and friends was a thrill. Making something brand new that I’d never done before was enough to drive my wild imagination. Imagination that really came alive especially when it was time to make a sauce. I loved making sauces. From scratch. With no recipe.

My wife always suggested from back then to bottle my sauces and put them on the market. They were either that good or she was extremely nice about it.

Days in retail leadership.

At some point I left the world of culinary exploration to work on a career in retail. It was unexpected, especially since I had plans to attend one of the foremost culinary schools in New York. After ten years the dream to build a food business resurfaced when we moved to Austin, Texas in 2021. We saw a clear opportunity to bring island heat and flavor to central Texas. It’s almost as if the complete reverse had happened. I left behind my retail career to jump cold turkey into the mobile food industry. We resurrected the old idea for “Mr.Pimento” that started with the love of making sauces, into what is now our effort to bring true, Jamaican jerk cuisine to Austin.

Not An Easy Road

The road has been long. Full of lessons, full of pain points and of course tons of success stories. We have had bitter and sweet experiences with the health department, made really good friends that are now mentors, we’ve had accidents, illnesses, days of selling out, days of not selling much, articles written about our brand, formed strategic partnerships, gained over one hundred and twenty 5 star reviews, suffered power outages and so much more. With all that said, it is still just the beginning. We are full of life as a brand and are staring into the future with plenty of promise.

Every success and setback has been a lesson offered to us. We don’t take any of it for granted because we have a vision in mind that we haven’t given up on. If you are reading this newsletter, that alone is a testament to the progress we have made. The support we get from readers and those who show up to buy our food is the life source of our business. The road hasn’t been easy, but it has been worth it because of supporters like you cheering us on!

  • Catering Is Big. If you or someone you know is having an event and looking for great food to be the center piece, give us a holler to bring some island flavor to that event! This also helps us grow our business.

  • Fall Specials Menu. This September we will be serving up the long awaited Oxtail Stew. So many requested this savory concoction. We will deliver! Starting Sept.17th. Stay tuned on instagram for more about this.

  • Jerk Sauce & Xtra Fiyah in a Bottle. Do you love our jerk sauce? We will have the Mr.Pimento’s Jerk Sauce in bottles available for you at the trailer. We also have the Xtra Fiyah sauce for those of you who can kick it with a little more heat. Both of these are made regularly right there at the trailer. So give us a shout if you are interested.
